Pork Tacos al Pastor
These delicious pork tacos al pastor are made with marinated pork, pineapple, and traditional Mexican spices.
Ingredients - Serves 4
- Lime wedges - For serving
- Cilantro - 1/2 cup, chopped
- Corn tortillas - 12
- Salt and pepper - To taste
- Cayenne pepper - 1/2 teaspoon
- Oregano - 1 teaspoon
- Cumin - 1 teaspoon
- Achiote paste - 2 tablespoons
- Garlic - 3 cloves, minced
- Onion - 1, chopped
- Pineapple - 1 cup, diced
- Pork shoulder - 2 pounds, thinly sliced
Let's Get Started
- In a blender, combine the pineapple, onion, garlic, achiote paste, cumin, oregano, cayenne pepper, salt, and pepper. Blend until smooth.
- Place the sliced pork in a large bowl and pour the marinade over it. Mix well to ensure all the pork is coated. Cover and refrigerate for at least 2 hours, or overnight for best results.
- Preheat the grill to medium-high heat. Remove the pork from the marinade and discard any excess marinade.
- Grill the pork slices for about 4-5 minutes per side, or until cooked through and slightly charred. Remove from the grill and let it rest for a few minutes.
- Warm the corn tortillas on the grill or in a skillet.
- Slice the grilled pork into smaller pieces and assemble the tacos by placing the pork on the warm tortillas. Top with chopped cilantro and serve with lime wedges.
