Pork Tacos al Pastor

Ingredients - Serves 4

Let's Get Started

  1. In a blender, combine the pineapple, onion, garlic, achiote paste, cumin, oregano, cayenne pepper, salt, and pepper. Blend until smooth.
  2. Place the sliced pork in a large bowl and pour the marinade over it. Mix well to ensure all the pork is coated. Cover and refrigerate for at least 2 hours, or overnight for best results.
  3. Preheat the grill to medium-high heat. Remove the pork from the marinade and discard any excess marinade.
  4. Grill the pork slices for about 4-5 minutes per side, or until cooked through and slightly charred. Remove from the grill and let it rest for a few minutes.
  5. Warm the corn tortillas on the grill or in a skillet.
  6. Slice the grilled pork into smaller pieces and assemble the tacos by placing the pork on the warm tortillas. Top with chopped cilantro and serve with lime wedges.
  7. Enjoy your delicious pork tacos al pastor!
