Pork Sinigang
Pork Sinigang is a traditional Filipino soup made with pork, vegetables, and tamarind broth.
Ingredients - Serves 6
- Pepper - To taste
- Salt - To taste
- Fish sauce - 2 tablespoons
- Spinach - 2 cups
- Eggplant - 2, sliced
- String beans - 1 cup, cut into 2-inch pieces
- Radish - 2, sliced
- Tomatoes - 2, quartered
- Onion - 1, sliced
- Water - 8 cups
- Tamarind soup base - 2 tablespoons
- Pork ribs - 1 kg
Let's Get Started
- In a large pot, bring the water to a boil.
- Add the pork ribs and simmer for 30 minutes, skimming off any impurities that rise to the surface.
- Add the tamarind soup base, onion, and tomatoes. Simmer for another 10 minutes.
- Add the radish, string beans, and eggplant. Cook for 5 minutes, or until the vegetables are tender.
- Stir in the spinach and cook for an additional 2 minutes.
- Season with fish sauce, salt, and pepper to taste.
- Serve hot with steamed rice.
