  1. In a large bowl, combine the soy sauce, vinegar, minced garlic, bay leaves, peppercorns, and brown sugar. Mix well.
  2. Add the pork cubes to the marinade and let it marinate for at least 30 minutes, or overnight for better flavor.
  3. Heat the cooking oil in a large pan or pot over medium heat.
  4. Remove the pork from the marinade, reserving the marinade for later.
  5. Add the pork to the hot oil and cook until browned on all sides.
  6. Pour in the reserved marinade and water. Bring to a boil.
  7. Reduce the heat to low, cover, and simmer for about 45 minutes to 1 hour, or until the pork is tender and the sauce has thickened.
