Pork Adobo

Ingredients - Serves 4
- Cooking oil - 2 tablespoons
- Water - 1 cup
- Brown sugar - 1 tablespoon
- Peppercorns - 1 teaspoon
- Bay leaves - 3
- Garlic - 4 cloves, minced
- Vinegar - 1/2 cup
- Soy sauce - 1/2 cup
- Pork shoulder - 1.5 lbs, cut into cubes

- In a large bowl, combine the soy sauce, vinegar, minced garlic, bay leaves, peppercorns, and brown sugar. Mix well.
- Add the pork cubes to the marinade and let it marinate for at least 30 minutes, or overnight for better flavor.
- Heat the cooking oil in a large pan or pot over medium heat.
- Remove the pork from the marinade, reserving the marinade for later.
- Add the pork to the hot oil and cook until browned on all sides.
- Pour in the reserved marinade and water. Bring to a boil.
- Reduce the heat to low, cover, and simmer for about 45 minutes to 1 hour, or until the pork is tender and the sauce has thickened.
- Serve hot with steamed rice and enjoy!
