Porcini Dusted Sablefish

Ingredients - Serves 4
- Fresh parsley - 1 tablespoon, chopped
- Lemon juice - 1 tablespoon
- White wine - 1/2 cup
- Garlic - 2 cloves, minced
- Butter - 2 tablespoons
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Porcini mushroom powder - 1/4 cup
- Sablefish fillets - 4 (6-ounce)
Let's Get Started
- Season the sablefish fillets with salt, pepper, and porcini mushroom powder.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the sablefish fillets and cook for about 4 minutes on each side, until the fish is opaque and flakes easily with a fork.
- Remove the fish from the skillet and set aside.
- In the same skillet, melt the butter over medium heat.
- Add the garlic and cook for 1 minute, until fragrant.
- Add the white wine and lemon juice, and bring to a simmer.
- Cook for 2-3 minutes, until the sauce has reduced slightly.
- Return the sablefish fillets to the skillet and spoon the sauce over the top.
