  1. In a large bowl, combine the flour and salt.
  2. Gradually add water to the flour mixture, kneading the dough until it is firm and smooth.
  3. Cover the dough and let it rest for 15 minutes.
  4. Divide the dough into small balls, about the size of a golf ball.
  5. Roll out each ball into a thin circle using a rolling pin.
  6. Heat the oil in a deep frying pan over medium heat.
  7. Carefully slide one poori into the hot oil. It should sizzle and rise to the surface.
  8. Fry the poori until it puffs up and turns golden brown, about 1-2 minutes. Flip it over and fry the other side.
  9. Remove the poori with a slotted spoon and drain on paper towels.
  10. Repeat with the remaining dough balls.
  11. Serve the pooris hot with your choice of curry or chutney.
