Pongal
Pongal is a traditional South Indian dish made with rice, lentils, and spices. It is typically served as a breakfast or lunch dish.
Ingredients - Serves 4
- Salt - To taste
- Curry leaves - 10-12
- Ginger - 1-inch piece, grated
- Cumin seeds - 1 teaspoon
- Black peppercorns - 1 teaspoon
- Cashews - 10-12
- Ghee - 2 tablespoons
- Water - 4 cups
- Yellow moong dal - 1/2 cup
- Rice - 1 cup
Let's Get Started
- Wash the rice and moong dal together and soak them in water for 10 minutes.
- In a pressure cooker, add the soaked rice and dal along with 4 cups of water.
- Pressure cook for 4-5 whistles or until the rice and dal are well cooked and mushy.
- In a separate pan, heat ghee and add cashews. Fry until golden brown. Remove and keep aside.
- In the same pan, add black peppercorns, cumin seeds, grated ginger, and curry leaves. Sauté for a minute.
- Add the cooked rice and dal mixture to the pan and mix well with the spices.
- Add salt to taste and mix again.
- Garnish with fried cashews and serve hot.
