  1. Preheat the oven to 375°F (190°C).
  2. Rinse the chicken and pat it dry with paper towels.
  3. In a small bowl, mix together the olive oil, minced garlic, paprika, dried oregano, dried thyme, salt, and black pepper to make a paste.
  4. Rub the paste all over the chicken, including under the skin and inside the cavity.
  5. Place the lemon slices and onion slices inside the chicken cavity.
  6. Tie the chicken legs together with kitchen twine.
  7. Place the chicken on a roasting pan or baking dish.
  8. Roast the chicken in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy.
  9. Remove the chicken from the oven and let it rest for 10 minutes before carving.
