Plateada
Plateada is a traditional Chilean dish made from a specific cut of beef rib. It's slow-cooked until tender and typically served with mashed potatoes or rice.

- Bay leaves - 2
- Beef broth - 2 cups
- Red wine - 2 cups
- Carrots - 2, sliced
- Garlic - 4 cloves, minced
- Onions - 2, sliced
- Plateada cut of beef - 1.5 kg

- Season the beef with salt and pepper.
- In a large pot, sear the beef on all sides until browned.
- Remove the beef from the pot and set aside.
- In the same pot, add the onions, garlic, and carrots. Cook until softened.
- Add the red wine to the pot and bring to a boil.
- Return the beef to the pot and add the beef broth and bay leaves.
- Cover the pot and simmer for about 3 hours, or until the beef is tender.
- Serve the plateada with mashed potatoes or rice.
