Pla Pao

- Lime - 1, sliced
- Fresh red chili - 1, sliced
- Garlic - 4 cloves, crushed
- Kaffir lime leaves - 4
- Lemongrass - 2 stalks, crushed
- Salt - 2 cups
- Whole fish - 1 (about 1.5 kg), cleaned and scaled
Let's Get Started
- Preheat your grill to medium heat.
- Stuff the fish with lemongrass, kaffir lime leaves, garlic, chili, and lime.
- Cover the fish entirely with salt, ensuring it's completely coated.
- Place the fish on the grill and cook for about 15 minutes on each side, or until the fish is cooked through and the salt crust is hard.
- Crack the salt crust and remove it before serving the fish.
- Serve the fish with a side of spicy Thai sauce.
