Chilli Garlic Corn
A spicy and tangy side dish that's perfect for summer barbecues or as a snack.
Ingredients - Serves 4
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
- Salt - To taste
- Red chilli flakes - 1 teaspoon
- Garlic - 4 cloves, minced
- Olive oil - 2 tablespoons
- Corn - 4 ears
Let's Get Started
- Preheat your grill to medium heat.
- Brush the corn with olive oil and place on the grill. Cook for about 10 minutes, turning occasionally, until the corn is charred and tender.
- While the corn is grilling, heat the remaining olive oil in a small pan over medium heat. Add the minced garlic and chilli flakes and cook for 1-2 minutes until fragrant.
- Remove the corn from the grill and brush with the garlic-chilli oil. Season with salt to taste.
- Squeeze fresh lime juice over the corn and sprinkle with chopped cilantro before serving.
