Mexican Street Corn
This is a popular street food in Mexico, Elote is grilled corn on the cob coated with creamy, cheesy, lime-scented, chili-flecked sauce.
Ingredients - Serves 4
- Salt - To taste
- Lime - 1, cut into wedges
- Cilantro - 1/4 cup, chopped
- Garlic - 2 cloves, minced
- Chili powder - 1 teaspoon
- Cotija cheese - 1/2 cup, crumbled
- Mayonnaise - 1/4 cup
- Corn - 4 ears
Let's Get Started
- Preheat your grill to medium-high heat.
- Grill corn, turning occasionally, until it is cooked through and charred in spots on all sides, about 8 minutes.
- Mix together mayonnaise, cheese, chili powder, garlic, and cilantro in a bowl.
- When the corn is done, spread the cheese mixture evenly over each ear of corn.
- Serve corn with lime wedges and salt to taste.
