Pisto Manchego

- Fresh parsley - 2 tablespoons, chopped
- Salt and pepper - To taste
- Tomatoes - 4, diced
- Garlic - 2 cloves, minced
- Eggplant - 1, diced
- Zucchini - 1, diced
- Green bell pepper - 1, diced
- Red bell pepper - 1, diced
- Onion - 1, diced
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large skillet over medium heat.
- Add the onion, red bell pepper, and green bell pepper. Sauté until the vegetables are softened, about 5 minutes.
- Add the zucchini, eggplant, and garlic. Cook for another 5 minutes, until the vegetables are tender.
- Stir in the diced tomatoes and season with salt and pepper. Cook for an additional 10 minutes, allowing the flavors to meld together.
- Remove from heat and sprinkle with fresh parsley before serving.
