Pinto Bean and Ham Soup

  1. Rinse the pinto beans and soak them overnight in water. Drain before using.
  2. In a large pot, heat some oil over medium heat. Add the diced ham and cook until browned.
  3. Add the chopped onion, carrots, celery, and minced garlic. Cook until the vegetables are tender.
  4. Add the soaked pinto beans, chicken broth, bay leaves, dried thyme, salt, and pepper. Bring to a boil.
