Pinto Bean and Ham Casserole

Ingredients - Serves 6
- Egg - 1
- Milk - 1/2 cup
- Cornbread mix - 1 box
- Shredded cheddar cheese - 1 cup
- Salt and pepper - To taste
- Cumin - 1 teaspoon
- Chili powder - 1 tablespoon
- Chicken broth - 1 cup
- Tomato sauce - 1 can (8 oz)
- Green bell pepper - 1, chopped
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Ham - 1 cup, diced
- Pinto beans - 2 cups, cooked
Let's Get Started
- Preheat the oven to 375°F.
- In a large skillet, cook the diced ham until browned. Remove from the skillet and set aside.
- In the same skillet, sauté the onion, garlic, and green bell pepper until softened.
- Add the cooked pinto beans, tomato sauce, chicken broth, chili powder, cumin, salt, and pepper to the skillet. Stir well to combine.
- Transfer the bean mixture to a greased casserole dish.
- In a separate bowl, prepare the cornbread mix according to package instructions, using the milk and egg.
