Pinnekjøtt Med Rotmos
Pinnekjøtt med Rotmos is a traditional Norwegian dish, typically served at Christmas. It consists of salted and dried lamb ribs that are steamed, and served with mashed rutabaga.
Ingredients - Serves 4
- Salt and pepper - To taste
- Cream - 100 ml
- Butter - 50 grams
- Potatoes - 4 large
- Rutabaga - 1 large
- Dried and salted lamb ribs - 2 kg
Let's Get Started
- Soak the lamb ribs in cold water for at least 24 hours, changing the water several times.
- Place the ribs in a large pot, cover with water, and bring to a boil. Reduce the heat and simmer for about 3 hours, or until the meat is tender and falls off the bone.
- While the ribs are cooking, peel and chop the rutabaga and potatoes. Place in a separate pot, cover with water, and bring to a boil. Cook until tender, about 20 minutes.
- Drain the rutabaga and potatoes and return to the pot. Add the butter and cream, and mash until smooth. Season with salt and pepper.
- Serve the lamb ribs with the mashed rutabaga and potatoes.
