Pineapple Pachadi
Pineapple Pachadi is a traditional Kerala dish made from ripe pineapple, coconut, and yogurt. It's a sweet and tangy side dish that's often served during festivals and feasts.
Ingredients - Serves 4
- Coconut oil - 2 tablespoons
- Curry leaves - A sprig
- Dry red chilies - 2
- Mustard seeds - 1/2 teaspoon
- Yogurt - 1 cup, beaten
- Cumin seeds - 1/2 teaspoon
- Coconut - 1/2 cup, grated
- Salt - To taste
- Jaggery - 2 tablespoons
- Red chili powder - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Green chili - 1, slit
- Pineapple - 1 cup, chopped
Let's Get Started
- Cook the pineapple with green chili, turmeric powder, red chili powder, jaggery, and salt until it becomes soft.
- Grind the coconut and cumin seeds into a fine paste.
- Add this coconut paste to the cooked pineapple and mix well. Cook for a few more minutes.
- Turn off the heat and add the beaten yogurt. Mix well.
- In a separate pan, heat the coconut oil and splutter mustard seeds. Add dry red chilies and curry leaves.
- Pour this tempering over the pachadi and mix well. Serve warm.
