Aviyal
Aviyal is a traditional South Indian dish made with mixed vegetables and coconut.
Ingredients - Serves 4
- Salt - To taste
- Coconut oil - 2 tablespoons
- Curry leaves - 10-12 leaves
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1 teaspoon
- Green chilies - 2, slit
- Curd (yogurt) - 1/2 cup
- Coconut - 1 cup, grated
- Mixed vegetables - 2 cups, chopped (carrots, beans, drumsticks, pumpkin, etc.)
Let's Get Started
- Boil the mixed vegetables in salted water until they are cooked but still firm. Drain and set aside.
- In a blender, grind the grated coconut, cumin seeds, and green chilies to a coarse paste.
- In a large pan, heat coconut oil and add curry leaves. Sauté for a minute.
- Add the ground coconut paste and turmeric powder. Cook for 2-3 minutes.
- Add the boiled vegetables and mix well. Cook for another 5 minutes.
- Reduce the heat and add curd (yogurt). Stir well and cook for 2-3 minutes.
- Season with salt to taste and remove from heat.
- Serve hot with steamed rice or roti.
