Ingredients - Serves 4

Let's Get Started

  1. Boil the mixed vegetables in salted water until they are cooked but still firm. Drain and set aside.
  2. In a blender, grind the grated coconut, cumin seeds, and green chilies to a coarse paste.
  3. In a large pan, heat coconut oil and add curry leaves. Sauté for a minute.
  4. Add the ground coconut paste and turmeric powder. Cook for 2-3 minutes.
  5. Add the boiled vegetables and mix well. Cook for another 5 minutes.
  6. Reduce the heat and add curd (yogurt). Stir well and cook for 2-3 minutes.
  7. Season with salt to taste and remove from heat.
  8. Serve hot with steamed rice or roti.
