  1. In a large bowl, combine the garlic, paprika, cumin, coriander, cayenne, olive oil, lemon juice, salt, and pepper.
  2. Add the pork cubes to the bowl and toss to coat in the marinade. Cover and refrigerate for at least 2 hours, or overnight.
  3. Preheat a grill or grill pan to medium-high heat.
  4. Thread the pork cubes onto the soaked wooden skewers.
  5. Grill the skewers for 2-3 minutes on each side, or until the pork is cooked through and slightly charred.
  6. Serve the pinchos morunos hot, with lemon wedges on the side if desired.
