Ingredients - Serves 4
- Wooden skewers - 8, soaked in water for 30 minutes
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Lemon juice - 2 tablespoons
- Olive oil - 2 tablespoons
- Cayenne pepper - 1/2 teaspoon
- Ground coriander - 1 teaspoon
- Ground cumin - 1 teaspoon
- Paprika - 1 tablespoon
- Garlic - 3 cloves, minced
- Pork tenderloin - 1 pound, cut into 1-inch cubes
Let's Get Started
- In a large bowl, combine the garlic, paprika, cumin, coriander, cayenne, olive oil, lemon juice, salt, and pepper.
- Add the pork cubes to the bowl and toss to coat in the marinade. Cover and refrigerate for at least 2 hours, or overnight.
- Preheat a grill or grill pan to medium-high heat.
- Thread the pork cubes onto the soaked wooden skewers.
- Grill the skewers for 2-3 minutes on each side, or until the pork is cooked through and slightly charred.
- Serve the pinchos morunos hot, with lemon wedges on the side if desired.
