Pinakbet
Pinakbet is a traditional Filipino vegetable dish made with a variety of vegetables and shrimp paste.
Ingredients - Serves 6
- Pepper - To taste
- Salt - To taste
- Cooking oil - 2 tablespoons
- Water - 1 cup
- Shrimp paste - 2 tablespoons
- Ginger - 1 thumb-sized piece, sliced
- Garlic - 3 cloves, minced
- Onion - 1, sliced
- Tomato - 2, sliced
- Squash - 1 cup, cubed
- String beans - 1 cup, cut into 2-inch pieces
- Okra - 1 cup
- Eggplant - 2, sliced
- Bitter melon - 1, sliced
Let's Get Started
- Heat the cooking oil in a large pan over medium heat.
- Saute the garlic, onion, and ginger until fragrant.
- Add the bitter melon, eggplant, okra, string beans, squash, and tomato. Stir-fry for 5 minutes.
- Add the shrimp paste and water. Cover and simmer for 15-20 minutes, or until the vegetables are tender.
- Season with salt and pepper to taste.
- Serve hot with steamed rice.
