Pike Place Chowder
A hearty and comforting seafood chowder, inspired by the famous Pike Place Market in Seattle.
Ingredients - Serves 4
- Mixed seafood - 1 pound
- Salt and pepper - To taste
- Fresh thyme - 1 teaspoon
- Heavy cream - 1 cup
- Potatoes - 2 large, diced
- Clam juice - 2 cups
- Flour - 1/3 cup
- Garlic - 2 cloves, minced
- Celery - 2 stalks, chopped
- Onions - 1 large, chopped
- Butter - 2 tablespoons
Let's Get Started
- Melt the butter in a large pot over medium heat.
- Add the onions, celery, and garlic and cook until the vegetables are soft, about 5 minutes.
- Stir in the flour to make a roux, then slowly whisk in the clam juice until smooth.
- Add the potatoes, heavy cream, thyme, salt, and pepper. Bring to a simmer and cook until the potatoes are tender, about 20 minutes.
- Add the mixed seafood and cook until heated through, about 5 minutes.
- Serve the chowder hot, with crusty bread on the side.
