Seafood Curry
A delicious and spicy curry packed with a variety of seafood. Perfect for a hearty dinner.
Ingredients - Serves 4
- Fresh coriander - For garnish
- Salt and pepper - To taste
- Mixed seafood - 500 grams
- Fish stock - 2 cups
- Coconut milk - 1 can
- Curry powder - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pan over medium heat.
- Add the onion and garlic and cook until the onion is soft, about 5 minutes.
- Add the curry powder and cook for another minute.
- Pour in the coconut milk and fish stock, then bring to a boil.
- Add the mixed seafood, reduce the heat, and simmer for 15-20 minutes, or until the seafood is cooked through.
- Season with salt and pepper to taste.
- Serve the curry hot, garnished with fresh coriander.
