- Mixed seafood - 1 kg (shrimp, mussels, clams, squid)
- Saffron threads - A pinch
- Fish stock - 4 cups
- White wine - 1 cup
- Tomatoes - 2, chopped
- Red bell pepper - 1, chopped
- Garlic - 3 cloves, minced
- Onion - 1, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat. Add the onion, garlic, and bell pepper and cook until softened.
- Add the tomatoes and cook until they break down and form a sauce.
- Pour in the white wine and let it simmer until the alcohol evaporates.
- Add the fish stock and saffron threads. Bring the soup to a boil.
- Add the mixed seafood to the pot. Cover and cook until the seafood is cooked through, about 10 minutes.
- Season the soup with salt and pepper to taste.
- Serve the soup hot, garnished with parsley.
