Açorda de Marisco

- Coriander - 1 bunch, chopped
- Fish stock - 1 liter
- Stale bread - 500 grams, torn into pieces
- Mixed seafood - 500 grams
- Tomatoes - 2, chopped
- Red bell pepper - 1, chopped
- Onion - 1 large, chopped
- Garlic - 4 cloves, minced
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the garlic, onion, and red bell pepper. Cook until the vegetables are soft, about 5 minutes.
- Add the tomatoes and cook for another 5 minutes.
- Add the mixed seafood and cook until it's just starting to turn opaque, about 5 minutes.
- Add the stale bread and fish stock. Stir until the bread is completely soaked and starts to break down.
- Bring the mixture to a simmer and cook for 20 minutes, stirring occasionally.
- Stir in the chopped coriander and season with salt and pepper.
- Serve the Açorda de Marisco hot, garnished with extra coriander if desired.
