  1. Season the fish fillets with salt and pepper.
  2. In a large pot, combine the vinegar, water, sugar, turmeric, curry powder, onions, garlic, and bay leaves. Bring to a boil.
  3. Add the fish to the pot and simmer for 15-20 minutes, or until the fish is cooked through.
  4. Remove the fish from the pot and set aside. Continue to simmer the sauce until it has reduced by half.
  5. Place the fish in a deep dish and pour the reduced sauce over the top. Let it cool to room temperature.
  6. Cover the dish and refrigerate for at least 24 hours before serving to allow the flavors to meld together.
