Phini Roti
Phini Roti is a traditional Indian dessert made with layers of thin, crispy dough soaked in sugar syrup.
Ingredients - Serves 8
- Pistachios - 2 tablespoons, chopped (for garnish)
- Rose water - 1 teaspoon
- Saffron strands - few strands
- Cardamom powder - 1/2 teaspoon
- Sugar - 1 cup
- Water - 1/2 cup
- Ghee (clarified butter) - 1/2 cup
- All-purpose flour - 2 cups
Let's Get Started
- In a mixing bowl, combine the all-purpose flour and ghee. Mix well until the mixture resembles breadcrumbs.
- Gradually add water and knead the dough until it becomes smooth and pliable.
- Divide the dough into small balls and roll each ball into a thin, round roti.
- Heat a non-stick pan over medium heat and cook each roti until it turns golden brown and crispy. Set aside.
- In a separate saucepan, combine sugar and water to make a sugar syrup. Bring it to a boil and simmer for 5 minutes.
- Add cardamom powder, saffron strands, and rose water to the sugar syrup. Mix well.
- Dip each cooked roti into the sugar syrup for a few seconds, ensuring it is fully soaked.
- Layer the soaked rotis on a serving plate, alternating with a sprinkle of chopped pistachios.
- Repeat the process until all the rotis are used, creating multiple layers.
- Garnish the top layer with more chopped pistachios.
- Allow the Phini Roti to cool and set for at least 1 hour before serving.
- Serve the Phini Roti as a delicious and sweet dessert.
