Barfi
Barfi is a popular Indian sweet made with condensed milk, sugar, and flavored with cardamom and nuts.
Ingredients - Serves 12
- Silver leaf (optional) - For garnish
- Pistachios - 1/4 cup, chopped
- Almonds - 1/4 cup, chopped
- Cardamom powder - 1 teaspoon
- Ghee (clarified butter) - 2 tablespoons
- Sugar - 1 cup
- Condensed milk - 1 can (14 oz)
Let's Get Started
- Grease a square or rectangular pan with ghee and set aside.
- In a heavy-bottomed pan, heat the ghee over medium heat.
- Add the condensed milk and sugar to the pan and stir well.
- Cook the mixture on low heat, stirring continuously, until it thickens and starts to leave the sides of the pan. This will take about 20-25 minutes.
- Add the cardamom powder and mix well.
- Remove the pan from heat and let the mixture cool slightly.
- Pour the mixture into the greased pan and spread it evenly.
- Sprinkle the chopped almonds and pistachios on top and gently press them into the mixture.
- Allow the barfi to cool completely and set for a few hours or overnight.
- Once set, cut the barfi into square or diamond-shaped pieces.
- Garnish with silver leaf, if desired.
- Serve and enjoy!
