  1. Preheat the oven to 325°F.
  2. In a small bowl, mix together the garlic powder, dried oregano, salt, and black pepper.
  3. Rub the pork shoulder with the spice mixture, making sure to coat it evenly.
  4. Heat olive oil in a large skillet over medium-high heat.
  5. Sear the pork shoulder on all sides until browned, about 5 minutes per side.
  6. Transfer the pork shoulder to a roasting pan and roast in the preheated oven for about 3 hours, or until the internal temperature reaches 145°F.
  7. Remove the pork shoulder from the oven and let it rest for 10 minutes before slicing.
  8. While the pork is resting, heat a tablespoon of olive oil in a skillet over medium heat.
  9. Add the sliced onions and sauté until caramelized, about 10 minutes.
  10. Slice the Italian rolls in half and place a slice of provolone cheese on the bottom half of each roll.
  11. Top with slices of roast pork and sautéed onions.
  12. Place the sandwiches under the broiler for a few minutes, or until the cheese is melted and bubbly.
