Pericana
Pericana is a traditional dish from the Marina Alta region in Alicante, Spain. It's a flavorful combination of dried peppers, salted mackerel, garlic, and olive oil.
Ingredients - Serves 4
- Olive oil - 4 tablespoons
- Garlic - 2 cloves, minced
- Salted mackerel - 200 grams
- Dried red peppers - 4
Let's Get Started
- Soak the dried peppers in warm water for 15 minutes to rehydrate them.
- While the peppers are soaking, desalt the mackerel by soaking it in cold water for 15 minutes, changing the water every 5 minutes.
- Drain the peppers and mackerel, then chop them into small pieces.
- Heat the olive oil in a pan over medium heat.
- Add the minced garlic to the pan and sauté until it's golden brown.
- Add the chopped peppers and mackerel to the pan and sauté for 10 minutes, stirring occasionally.
- Serve the pericana warm with a side of crusty bread.
