Let's Get Started

  1. Soak the dried peppers in warm water for 15 minutes to rehydrate them.
  2. While the peppers are soaking, desalt the mackerel by soaking it in cold water for 15 minutes, changing the water every 5 minutes.
  3. Drain the peppers and mackerel, then chop them into small pieces.
  4. Heat the olive oil in a pan over medium heat.
  5. Add the minced garlic to the pan and sauté until it's golden brown.
  6. Add the chopped peppers and mackerel to the pan and sauté for 10 minutes, stirring occasionally.
  7. Serve the pericana warm with a side of crusty bread.
