Edamame Falafel with Tahini Sauce
This is a delicious and healthy twist on traditional falafel, using edamame instead of chickpeas. The tahini sauce adds a creamy, tangy finish.
Ingredients - Serves 4
- Lemon juice - 1 tablespoon
- Garlic - 1 clove, minced
- Water - 2-3 tablespoons
- Tahini - 1/2 cup
- Olive oil - For frying
- Salt and pepper - To taste
- Flour - 1/4 cup
- Lemon juice - 2 tablespoons
- Coriander - 1 teaspoon
- Cumin - 1 teaspoon
- Parsley - 1/2 cup, chopped
- Garlic - 2 cloves, minced
- Edamame - 2 cups, shelled and cooked
Let's Get Started
- In a food processor, combine the edamame, garlic, parsley, cumin, coriander, lemon juice, flour, salt, and pepper. Process until smooth.
- Form the mixture into small patties and set aside.
- Heat the olive oil in a large skillet over medium heat. Add the falafel patties and cook until golden brown on both sides, about 3-4 minutes per side.
- While the falafel is cooking, make the tahini sauce. In a small bowl, whisk together the tahini, water, garlic, and lemon juice until smooth.
- Serve the falafel with the tahini sauce on the side.
