Peking Duck
Peking Duck is a famous Chinese dish known for its crispy skin and tender meat. It is traditionally served with pancakes, scallions, and hoisin sauce.
Ingredients - Serves 4
- Hoisin sauce - 1/2 cup
- Scallions - 4, thinly sliced
- Pancakes - 16
- Rice vinegar - 2 tablespoons
- Soy sauce - 2 tablespoons
- Honey - 2 tablespoons
- Chinese five-spice powder - 2 tablespoons
- Salt - 2 tablespoons
- Whole duck - 1 (about 5-6 pounds)
Let's Get Started
- Preheat the oven to 350°F (175°C).
- Clean the duck thoroughly and pat it dry with paper towels.
- In a small bowl, mix together the salt and Chinese five-spice powder.
- Rub the salt and spice mixture all over the duck, including the cavity.
- Place the duck on a rack in a roasting pan, breast side up.
- Roast the duck in the preheated oven for 2 hours, or until the skin is crispy and the internal temperature reaches 165°F (74°C).
- While the duck is roasting, prepare the glaze by combining honey, soy sauce, and rice vinegar in a small saucepan. Heat over low heat until the mixture is well combined and slightly thickened.
- After the duck has roasted for 1 hour, brush the glaze all over the duck. Repeat every 15 minutes until the duck is done.
- Remove the duck from the oven and let it rest for 10 minutes before carving.
- To serve, slice the duck into thin pieces. Serve with pancakes, sliced scallions, and hoisin sauce.
