Pechuga Rellena

- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Bell peppers - 2, finely chopped
- Cheese - 4 slices
- Ham - 4 slices
- Chicken breasts - 4, boneless and skinless
Let's Get Started
- Preheat the oven to 375°F (190°C).
- Cut a pocket into each chicken breast, being careful not to cut all the way through.
- Stuff each chicken breast with a slice of ham, a slice of cheese, and some chopped bell peppers.
- Secure the opening with toothpicks to keep the stuffing inside.
- Season the outside of the chicken breasts with salt and pepper.
- Heat the olive oil in a large oven-safe skillet over medium heat.
- Add the chicken breasts and cook until golden brown on both sides, about 5 minutes per side.
- Transfer the skillet to the preheated oven and bake for 20 minutes, or until the chicken is cooked through and no longer pink in the middle.
- Remove the toothpicks before serving.
