Pastel de Choclo
Pastel de Choclo is a traditional Chilean dish made with ground beef, corn, and various seasonings. It is similar to a corn casserole topped with a golden crust.
Ingredients - Serves 6
- Hard-boiled eggs - 2, sliced
- Olives - 1/4 cup, sliced
- Raisins - 1/4 cup
- Butter - 2 tablespoons
- Sugar - 1 tablespoon
- Milk - 1 cup
- Corn kernels - 4 cups
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Ground beef - 1 pound
Let's Get Started
- Preheat the oven to 350°F.
- In a large skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned and the onion is softened.
- Add the cumin, paprika, salt, and black pepper to the skillet. Stir to combine.
- In a blender or food processor, blend the corn kernels, milk, sugar, and butter until smooth.
- Pour half of the corn mixture into the skillet with the ground beef. Stir to combine.
- Spread the remaining corn mixture evenly over the beef mixture in the skillet.
- Top with raisins, olives, and sliced hard-boiled eggs.
- Bake for 30-40 minutes, or until the crust is golden and the filling is heated through.
- Remove from the oven and let it cool for a few minutes before serving.
- Serve hot and enjoy!
