  1. In a large skillet, cook the ground beef and onions over medium heat until the beef is browned and the onions are soft.
  2. Add the garlic, paprika, cumin, salt, and pepper and cook for another minute.
  3. Remove from the heat and stir in the hard-boiled eggs and olives.
  4. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  5. Place a spoonful of the beef mixture in the center of each empanada dough round.
  6. Fold the dough over the filling to create a half-moon shape and crimp the edges to seal.
  7. Place the empanadas on the prepared baking sheet and brush with the beaten egg.
  8. Bake for 20-25 minutes, or until the empanadas are golden brown.
