Sopa Negra

Ingredients - Serves 4
- Cooked rice - 2 cups
- Hard-boiled eggs - 4
- Pepper - To taste
- Salt - To taste
- Cilantro - 1/2 cup, chopped
- Bell pepper - 1, chopped
- Onion - 1 large, chopped
- Garlic - 2 cloves, minced
- Water - 6 cups
- Black beans - 2 cups, dried
Let's Get Started
- Soak the black beans in water overnight.
- Drain the beans and place them in a large pot with the 6 cups of water.
- Add the garlic, onion, bell pepper, and cilantro to the pot.
- Bring the mixture to a boil, then reduce the heat and let it simmer for about 2 hours, or until the beans are soft.
