Ingredients - Serves 4

Let's Get Started

  1. Soak the raisins in warm water for 10 minutes, then drain.
  2. Heat the olive oil in a large pan over medium heat. Add the onion and fennel and cook until softened.
  3. Add the anchovies to the pan and stir until they dissolve.
  4. Add the sardines, pine nuts, and raisins to the pan. Cook for a few minutes until the sardines are cooked through.
  5. In the meantime, cook the pasta in a large pot of boiling salted water until al dente. Drain, reserving some of the pasta water.
  6. Add the saffron to the pan with the sardines, along with a little of the pasta water. Stir to combine.
  7. Add the cooked pasta to the pan and toss to combine with the sauce. Season with salt and pepper to taste.
  8. Serve the pasta hot, garnished with a few extra pine nuts if desired.
