Pasta Con Le Sarde
Pasta con le Sarde is a traditional Sicilian dish that combines pasta with sardines, fennel, raisins, and pine nuts.
Ingredients - Serves 4
- Salt and pepper - To taste
- Olive oil - 4 tablespoons
- Saffron - A pinch
- Anchovies - 4 fillets
- Onion - 1, chopped
- Pine nuts - 50 grams
- Raisins - 50 grams
- Fennel - 1 bulb, chopped
- Fresh sardines - 500 grams, cleaned and filleted
- Pasta - 500 grams
Let's Get Started
- Soak the raisins in warm water for 10 minutes, then drain.
- Heat the olive oil in a large pan over medium heat. Add the onion and fennel and cook until softened.
- Add the anchovies to the pan and stir until they dissolve.
- Add the sardines, pine nuts, and raisins to the pan. Cook for a few minutes until the sardines are cooked through.
- In the meantime, cook the pasta in a large pot of boiling salted water until al dente. Drain, reserving some of the pasta water.
- Add the saffron to the pan with the sardines, along with a little of the pasta water. Stir to combine.
- Add the cooked pasta to the pan and toss to combine with the sauce. Season with salt and pepper to taste.
- Serve the pasta hot, garnished with a few extra pine nuts if desired.
