Paskha
Paskha is a traditional Russian Easter dessert made with cottage cheese, butter, dried fruits, and nuts.
Ingredients - Serves 8
- Decorative molds (optional) - For shaping
- Egg yolks - 2
- Candied citrus peel - 1/4 cup, finely chopped
- Chopped nuts (almonds, walnuts, pistachios) - 1/2 cup
- Dried fruits (raisins, currants, chopped apricots) - 1/2 cup
- Vanilla extract - 1 teaspoon
- Powdered sugar - 1/2 cup
- Unsalted butter - 1/2 cup, softened
- Cottage cheese - 2 cups
Let's Get Started
- In a large bowl, combine the cottage cheese, softened butter, powdered sugar, and vanilla extract. Mix well until smooth and creamy.
- Add the dried fruits, chopped nuts, candied citrus peel, and egg yolks to the mixture. Stir until all ingredients are evenly distributed.
- Line the decorative molds with cheesecloth, leaving some excess hanging over the edges.
- Fill the molds with the paskha mixture, pressing it down firmly to remove any air pockets.
- Fold the excess cheesecloth over the top of the paskha and place a weight on it to help remove excess moisture. Refrigerate for at least 6 hours or overnight.
- To serve, remove the paskha from the molds and unwrap the cheesecloth. Decorate with additional dried fruits and nuts, if desired.
- Slice and serve chilled. Paskha is traditionally enjoyed with kulich, a sweet Russian Easter bread.
