Ingredients - Serves 12
- Vegetable oil - For frying
- Candied orange peel - 1/4 cup
- Chocolate chips - 1/2 cup
- Vanilla extract - 1 teaspoon
- Powdered sugar - 1 cup
- Ricotta cheese - 2 cups
- White wine - 1/2 cup
- Egg yolks - 2
- Butter - 2 tablespoons
- Salt - 1/4 teaspoon
- Sugar - 1 tablespoon
- All-purpose flour - 2 cups
Let's Get Started
- In a large bowl, combine the flour, sugar, and salt. Cut in the butter, then add the egg yolks and wine. Knead until the dough comes together, then wrap in plastic and refrigerate for 1 hour.
- In another bowl, combine the ricotta, powdered sugar, vanilla, chocolate chips, and candied orange peel. Mix until well combined, then refrigerate.
- Roll out the dough on a lightly floured surface to about 1/8 inch thick. Cut out circles using a round cookie cutter.
- Wrap each circle of dough around a cannoli tube, sealing the edges with a bit of water.
- Heat the vegetable oil in a deep fryer or large pot to 375°F. Fry the cannoli shells a few at a time, until golden brown. Drain on paper towels and let cool.
- Once the shells are cool, remove the cannoli tubes and fill with the ricotta mixture. Dust with additional powdered sugar before serving.
