Chocolate Soufflé

Ingredients - Serves 4
- Powdered sugar - For dusting
- Cream of tartar - 1/4 teaspoon
- Sugar - 1/2 cup
- Egg whites - 6
- Egg yolks - 3
- Unsalted butter - 2 tablespoons
- Dark chocolate - 4 ounces
- Unsweetened cocoa powder - 2 tablespoons
Let's Get Started
- Preheat the oven to 375°F. Butter four ramekins and dust with cocoa powder, shaking out the excess.
- Melt the chocolate and butter in a double boiler over simmering water, stirring until smooth. Remove from heat and stir in the egg yolks.
- In a large bowl, beat the egg whites with the cream of tartar until soft peaks form. Gradually add the sugar, beating until the whites are glossy and hold stiff peaks.
- Fold one-third of the egg whites into the chocolate mixture to lighten it, then fold in the remaining egg whites.
- Divide the mixture among the prepared ramekins and smooth the tops with a spatula.
- Bake for 15-20 minutes, or until the soufflés are puffed and set but still a little jiggly in the center.
- Dust the soufflés with powdered sugar and serve immediately.
