Parsnip Purée
A creamy, sweet parsnip purée, perfect as a side dish for your main course.
Ingredients - Serves 4
- Salt and pepper - To taste
- Heavy cream - 1/4 cup
- Butter - 4 tablespoons
- Parsnips - 1 pound, peeled and chopped
Let's Get Started
- Place the parsnips in a large pot and cover with water. Bring to a boil over high heat.
- Reduce the heat to medium and simmer until the parsnips are tender, about 15 minutes.
- Drain the parsnips and return them to the pot.
- Add the butter, heavy cream, salt, and pepper to the pot.
- Use a hand blender to purée the parsnips until smooth.
- Taste and adjust the seasoning as needed.
- Serve the parsnip purée warm.
