Ingredients - Serves 4

Let's Get Started

  1. Melt the butter in a large pot over medium heat.
  2. Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
  3. Add the diced ayote squash to the pot and cook for another 5 minutes.
  4. Pour in the broth and bring the mixture to a boil. Reduce the heat and let it simmer until the squash is tender, about 20 minutes.
  5. Use an immersion blender to puree the soup until it's smooth. You can also transfer the soup to a regular blender to do this, but be careful as the soup will be hot.
  6. Stir in the heavy cream and season with salt and pepper. Cook for another 5 minutes, until the soup is heated through.
  7. Serve the soup hot, with a sprinkle of fresh herbs on top if desired.
