Crema de Ayote
Crema de Ayote, also known as Cream of Squash Soup, is a popular dish in Central America. It's a creamy, comforting soup that's perfect for a chilly day.
Ingredients - Serves 4
- Salt and pepper - To taste
- Butter - 2 tablespoons
- Heavy cream - 1 cup
- Chicken or vegetable broth - 4 cups
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Ayote squash - 1 medium, peeled and diced
Let's Get Started
- Melt the butter in a large pot over medium heat.
- Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
- Add the diced ayote squash to the pot and cook for another 5 minutes.
- Pour in the broth and bring the mixture to a boil. Reduce the heat and let it simmer until the squash is tender, about 20 minutes.
- Use an immersion blender to puree the soup until it's smooth. You can also transfer the soup to a regular blender to do this, but be careful as the soup will be hot.
- Stir in the heavy cream and season with salt and pepper. Cook for another 5 minutes, until the soup is heated through.
- Serve the soup hot, with a sprinkle of fresh herbs on top if desired.
