Let's Get Started

  1. Preheat the oven to 325°F.
  2. Roast the bone marrow in the oven for 15 minutes, or until soft.
  3. Scoop out the marrow and blend with the eggs, heavy cream, salt, and pepper until smooth.
  4. Pour the mixture into ramekins and place in a water bath.
  5. Bake for 45 minutes, or until set.
  6. While the flan is baking, sauté the mushrooms in butter and garlic until soft.
  7. Serve the flan topped with the mushroom sauce and garnished with parsley.
