Chupe de Centolla
Chupe de Centolla is a traditional Chilean dish, a creamy soup made with king crab, cheese, and bread crumbs.
Ingredients - Serves 4
- Salt and pepper - To taste
- Parmesan cheese - 1/2 cup, grated
- Bread crumbs - 1/2 cup
- Heavy cream - 1 cup
- White wine - 1/2 cup
- Butter - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- King crab meat - 2 cups
Let's Get Started
- Preheat the oven to 375°F.
- In a large pot, melt the butter over medium heat. Add the onion and garlic and cook until soft.
- Add the crab meat and cook for a few minutes until it changes color.
- Add the white wine and let it reduce for a couple of minutes.
- Add the heavy cream, bread crumbs, and half of the Parmesan cheese. Stir well and season with salt and pepper.
- Pour the mixture into an oven-safe dish. Top with the remaining Parmesan cheese.
- Bake for 15-20 minutes, or until the top is golden and bubbly.
