Parsnip and Coconut Rice
This flavorful dish combines parsnips and coconut milk to create a delicious and aromatic rice dish.
Ingredients - Serves 4
- Lime juice - 1 tablespoon
- Cilantro - 2 tablespoons, chopped
- Salt - 1/2 teaspoon
- Water - 1 cup
- Basmati rice - 1 cup
- Coconut milk - 1 can (400ml)
- Parsnips - 2 large, peeled and diced

- In a large saucepan, heat the coconut milk over medium heat.
- Add the diced parsnips and cook for 5 minutes, until slightly softened.
- Add the basmati rice, water, and salt to the saucepan. Stir well.
- Bring the mixture to a boil, then reduce the heat to low and cover the saucepan.
- Simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let it sit, covered, for 5 minutes.
