Ingredients - Serves 4
- Cilantro - 1/4 cup, chopped
- Lime juice - 2 tablespoons
- Mushrooms - 1 cup, sliced
- Thai chili peppers - 2, crushed
- Sugar - 1 teaspoon
- Fish sauce - 2 tablespoons
- Kaffir lime leaves - 4
- Galangal - 1 inch piece, sliced
- Lemongrass - 2 stalks, crushed
- Chicken breast - 2, cut into thin strips
- Coconut milk - 2 cups
Let's Get Started
- In a pot, combine coconut milk, lemongrass, galangal, kaffir lime leaves, fish sauce, sugar, and chili peppers. Bring to a boil.
- Add the chicken and mushrooms to the pot. Reduce heat and simmer until the chicken is cooked through, about 15-20 minutes.
- Remove from heat and stir in lime juice.
- Garnish with cilantro before serving.
