Aguachile
Aguachile is a Mexican dish made of shrimp, submerged in liquid seasoned with chili peppers, lime juice, salt, cilantro, slices of cucumber and slices of onion.
Ingredients - Serves 4
- Salt - To taste
- Jalapeno - 2, seeds removed
- Lime juice - 1 cup
- Cilantro - 1 bunch
- Red onion - 1/2, thinly sliced
- Cucumber - 1, thinly sliced
- Shrimp - 1 pound, peeled and deveined
Let's Get Started
- In a blender, combine the cilantro, lime juice, jalapenos, and salt. Blend until smooth.
- In a large bowl, combine the shrimp, cucumber, and red onion.
- Pour the cilantro mixture over the shrimp and vegetables. Stir to combine.
- Cover and refrigerate for at least 15 minutes, or up to 1 hour.
- Serve the aguachile chilled, with tortilla chips if desired.
