Ingredients - Serves 6
- Avocado - 1, sliced
- Olive oil - 2 tablespoons
- Lime juice - 1/4 cup
- Cilantro - 1/2 cup, chopped
- Green bell pepper - 1, chopped
- Tomatoes - 2 large, chopped
- Garlic - 2 cloves, minced
- Onion - 1 large, chopped
- Black pepper - 1 teaspoon
- Salt - 1 tablespoon
- Water - Enough to cover the meat
- Beef brisket - 2 pounds
Let's Get Started
- Place the beef brisket in a large pot and cover with water. Add salt and black pepper.
- Bring to a boil, then reduce the heat and simmer for about 2 hours, or until the meat is tender.
- Remove the meat from the pot and let it cool. Once cool, shred the meat using two forks.
- In a large bowl, combine the shredded meat, chopped onion, minced garlic, chopped tomatoes, chopped green bell pepper, and chopped cilantro.
