Parsnip and Bacon Carbonara
This creamy and flavorful parsnip and bacon carbonara is a twist on the classic Italian pasta dish.
Ingredients - Serves 4
- Fresh parsley - 2 tablespoons, chopped
- Salt and pepper - To taste
- Garlic - 2 cloves, minced
- Parmesan cheese - 1 cup, grated
- Eggs - 2 large
- Spaghetti - 12 ounces
- Bacon - 8 slices, chopped
- Parsnips - 4 medium, peeled and thinly sliced
Let's Get Started
- Cook the bacon in a large skillet over medium heat until crispy. Remove the bacon from the skillet and set aside.
- In the same skillet, add the sliced parsnips and minced garlic. Cook until the parsnips are tender and lightly browned, about 8-10 minutes. Remove from heat and set aside.
- Cook the spaghetti according to package instructions until al dente. Drain and set aside.
- In a bowl, whisk together the eggs and grated Parmesan cheese. Season with salt and pepper.
- Return the skillet with the parsnips and garlic to low heat. Add the cooked spaghetti and bacon to the skillet and toss to combine.
- Pour the egg and cheese mixture over the pasta and quickly toss to coat. The heat from the pasta will cook the eggs and create a creamy sauce.
- Remove from heat and garnish with chopped fresh parsley.
- Serve immediately and enjoy!
