Ingredients - Serves 4
- Salt and pepper - To taste
- Fresh parsley - 2 tablespoons, chopped
- Feta cheese - 1/2 cup, crumbled
- Breadcrumbs - 1/2 cup
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Olive oil - 2 tablespoons
- Large mushrooms - 12
Let's Get Started
- Preheat the oven to 375°F (190°C).
- Remove the stems from the mushrooms and chop them finely.
- Heat the olive oil in a pan over medium heat. Add the chopped mushroom stems, onion, and garlic, and sauté until softened.
- Remove the pan from the heat and stir in the breadcrumbs, feta cheese, and parsley. Season with salt and pepper.
- Stuff each mushroom cap with the breadcrumb mixture and place them on a baking sheet.
- Bake for 20-25 minutes, or until the mushrooms are tender and the stuffing is golden brown.
