Parsnip and Avocado Guacamole
A unique twist on traditional guacamole, this recipe combines the creaminess of avocado with the earthy sweetness of parsnips.
Ingredients - Serves 4
- Tortilla chips - For serving
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Garlic - 1 clove, minced
- Jalapeno - 1 small, seeded and finely chopped
- Cilantro - 2 tablespoons, chopped
- Red onion - 1/4 cup, finely chopped
- Lime juice - 2 tablespoons
- Avocado - 2 ripe, peeled and pitted
- Parsnips - 2 medium, peeled and diced
Let's Get Started
- Bring a pot of water to a boil. Add the diced parsnips and cook until tender, about 10 minutes. Drain and let cool.
- In a bowl, mash the avocados with a fork until smooth.
- Add the cooked parsnips, lime juice, red onion, cilantro, jalapeno, garlic, salt, and black pepper to the mashed avocados. Mix well to combine.
- Taste and adjust the seasoning if needed.
- Serve the parsnip and avocado guacamole with tortilla chips.
