  1. In a bowl, combine the ground beef, chopped onion, egg, bread crumbs, Dijon mustard, salt, and pepper. Mix well.
  2. Divide the mixture into 4 equal portions and shape them into patties.
  3. Heat the butter in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until cooked to your desired level of doneness.
  4. Remove the patties from the skillet and keep them warm.
  5. In the same skillet, fry the egg yolks for about 1 minute, or until the edges are set but the yolks are still runny.
  6. To serve, place a patty on each plate and top it with a fried egg yolk. Garnish with sliced red onion, capers, pickles, and parsley.
  7. Serve the Pariserbøf with a side of crispy fries or a fresh salad.
